A Few of Joan's Favorite Breakfast Recipes
As an avid health and wellness advocate I’ve learned eating breakfast is important to help wake up our brain and body. But being a mom of two sets of growing twins and spending a lot of time on the road for work I admittedly don't always find the time to eat a full heart healthy, brain boosting breakfast. But hey, we do what we can, right?
On the days I find myself with some extra time in the morning I love to whip up these yummy and nutritious meals. Here are my favorite breakfast foods:
My morning omelet:
I’m not a big sweets gal, so eggs and toast are usually my cup of tea. A handful of spinach, cut up cherry tomatoes, a few mushrooms and 1/3 of an avocado are the ingredients for my “go-to” breakfast omelet. Since I don’t have a cholesterol issue, I usually use 1 egg yoke along with egg whites – I like the extra protein.
Avocado Toast:
Avocado is my favorite food on the planet – I can never get enough! If I’m a little crunched for time and need something quick I toss a piece of 7-grain bread in the toaster. When it’s ready I just spread ½ of an avocado on top. Not only is avocado DELICIOUS, but it’s also considered a healthy fat and contains around 20 vitamins and minerals.
Note: If you are an egg lover like me, add a poached egg on top - yummy!
Green Smoothie:
When I was going through my chemotherapy treatment I was told by my nutritionist to drink a green smoothie filled with probiotics every morning. Now, at first I was a little iffy on the idea of drinking my veggies, but I turns out I actually really enjoyed it. See the video below for my recipe!
